Brownie Trifles

I can’t believe that I’ve been doing this series for over a month and have yet to post anything I’ve baked. I definitely like cooking, but I love baking. It is a huge stress reliever for me — not something that I am required/needed to do, like cook dinner, but instead something special that provides an opportunity to get creative. Of course, indulging in it once it’s done isn’t too bad either.

So! This week I have a two-fer for you guys. And the subject? Brownies! I tested out two different recipes that made brownie parfaits in a mason jars and they were both SO delicious that I couldn’t not post both of them. One is s’mores in a jar and the other is a brownie batter trifle. I had such a hard time picking a favorite, but I think the brownie batter wins this round for one reason: brownie. batter. whipped. cream. Take a minute to think about that if you need to… then put down everything and go get the ingredients to make one of these immediately. I promise you will not be disappointed! Just think about halfing the recipe if you don’t want to end up eating 4 mason jars of these :)

S’mores in a Jar

Adapted from How Sweet Eats

Ingredients:

1 1/2 Cups Graham Cracker Crumbs

4 Tablespoons Butter

Pinch of salt

1 Box Brownies (I use Betty Crocker Triple Chunk)

1 Jar Fluff

1 Bag Large Marshmallows

4-16oz Mason Jars

 

Directions: 

Make brownies according to instructions on the box. Once baked, remove from oven and cool completely.

Meanwhile, spray your mason jars with non-stick cooking spray. In a separate bowl, melt butter. Mix in graham crumbs and salt until moistened.  Press graham crust into the bottom of the jars, distributing evenly. I pressed the crumbs down firmly with the flat bottom of a clean screwdriver, but they don’t need to look perfect.

When brownies are cool, crumble and again, distribute evenly amongst the jars on top of the graham cracker crust layer. Add two heaping scoops of fluff to each jar, topped by 2-3 large marshmallows.  Heat the broiler on your oven and watching carefully, brown marshmallows for about 1-2 minutes, or until golden brown. Do not take your eyes off them! Best served immediately.

First add your graham cracker crust, followed by brownies.

Top with fluff and marshmallows. Place under broiler until golden brown.

Brownie Batter Parfait

Recipe by Cookies + Cups


Ingredients:

1 Box of Brownies, prepared and crumbled

4 16z Mason Jars

Brownie Batter Whipped Cream:

1 pint heavy whipping cream

1 cup dry brownie mix

 

Egg-free Brownie Batter:

2 1/2 cups dry brownie mix

2 Tbsp vegetable oil

3-4 Tbsp water

 

Directions:

Brownie Batter Whipped Cream:

In a large mixing bowl combine heavy cream and dry brownie mix. Using whisk attachment, beat cream for 2-3 minutes on medium high speed until whipped cream forms stiff peaks.Set aside.

 

Egg-Free Brownie Batter:

In a medium bowl combine dry brownie mix, oil and water. Stir until it is a smooth consistency. Adjust amount of water on the thickness of batter desired.

 

Assembling parfaits:

In your mason jar, layer brownie pieces, then brownie batter, and finally whipped cream. Repeat process. Add ingredients for whipped cream to bowl. Beat until stiff peaks form.
