Mango Baked Beans

I ‘ve been a Bush’s baked beans girl all my life — they are delicious, quick, easy — basically the perfect side dish for anything on the grill. But as it goes, you get sick of eating the same thing and want to change it up. I’ve tried other flavors, but honestly, I don’t feel like there is much of a difference. Also, can we talk about how there is always that one, GIANT chunk of bacon? Every. Single. Time. No fail. My husband and I joke that whoever gets the giant chunk has to do the dishes. It kinda weirds me out though; Why is there only one chunk, but never two? How do they always get one in each can? I’m probably thinking about this too much…

Anyway, before this gets awkward, let me move along. I decided to try out making my own baked beans to see if I could change it up a bit. I tried this once in high school (shout out to Ms. Stafford from Foods II) and they were awesome. It’s a relatively quick recipe that you can throw together without too much stress; the hardest part is probably frying bacon so if you can do that, then these should a breeze! The mango flavor is distinct, but not overwhelming. Give ’em a try next time you a looking for a new side; I promise people will be impressed!

Note: This recipe calls for an immersion blender. I can’t remember if I talked about this gadget or not already, but it is seriously one of my all time favorite kitchen utensils — I highly recommend picking one up. They are only $35 and can be used for all kinds of soups, sauces, and even milkshakes! If you can’t find one in a pinch, use a food processor instead.

 

Mango Baked Beans

Recipe by: Buns In My Oven

Ingredients:

  • 1 pound bacon
  • ½ sweet onion
  • 1 jalapeño pepper
  • 1 ¼ cups ketchup
  • ½ cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons molasses
  • 1 tablespoon Worcestershire sauce
  • 1 clove garlic, grated
  • 1 teaspoon salt
  • 1 teaspoon fresh ground black pepper
  • ½ mango, diced
  • 48 ounce jar cooked Great Northern beans

Instructions:

Add bacon to a large skillet over medium heat. Stir often, until just starting to crisp. Once cooked, crumble into small pieces. Meanwhile, dice the onion and jalapeño pepper. Add to the skillet with the cooked bacon and cook for an additional 5 minutes.

In a small sauce pan set over low heat, combine the ketchup, brown sugar, vinegar, molasses, Worcestershire sauce, garlic, salt, and pepper. Stir to combine. Bring to a boil over and then remove from heat. Add the diced mangos to the sauce. Using an immersion blender, blend the sauce until smooth.

When the sauce is smooth, add to the pan of bacon and onions. Add the beans and stir to coat in the sauce.

Place beans in a preheated 350 degree oven and bake for 50 minutes.


When a recipe calls for TONS of ingredients, I always set them all out for easier access.
Cook bacon. Then crumble and add diced onions and jalapeños.
Add all ingredients for sauce to your pot and heat until boiling. 
Add in mangos and blend. 
Add beans and sauce to your bacon mixture and you are ready for the oven!
